As soon as the weather starts getting colder, Darren has a particular list of meals he prefers to eat. Starting with the Swedish Meatballs. Enjoy this family favorite recipe below.
1 egg, beaten
1/3 cup finely chopped onion
1/4 cup fine dry bread crumbs
1/2 teaspoon salt
1/4 teaspoon pepper
1 pound thawed ground beef
1 tablespoon cooking oil
2 tablespoons all-purpose flour
3/4 cup water
1/4 cup half-and-half or light cream
1 tablespoon soy sauce
Step 1: In a large bowl combine beaten egg, onion, bread crumbs, salt and pepper. Add ground beef and mix well.
Step 2: Share into 30 meatballs, about 1 1/4 inches each. Cook in hot oil in large skillet until browned, shaking skillet gently to turn meatballs. Continue cooking about 10 minutes more or until no longer pink inside, turning as necessary.
Step 3: Drain meatballs on paper towels, reserving 2 tablespoons of the drippings in the skillet. Stir flour into drippings. Add water, cream and soy sauce. Cook and stir until thickened and bubbly. Cook 1 minute more.
Step 4: Return meatballs to skillet, heat through, stirring gently. Makes 6 servings.
