Taco Casserole

If you ask Darren what my favorite food is, he'll answer right if he says Mexican. From Corona's to taco's, to all you can eat chips and guacamole — I love nothing more! Every time Darren is gone for a night we always make sure there's a bag of chips and a container of guacamole ready for me to eat for dinner when he's gone.

Taco Casserole with all the fixings


When Darren is home and we need more substance than just chips and guac for dinner, one of our favorite's is the taco casserole. One of mom's friends gave me this recipe after Darren and I got married. Living on a farm herself, she knew the importance of having quick and easy recipes to whip up on a busy night.


Ingredients:

- 7 oz Bag Crushed Nacho Doritos

- 1 lb Ground Beef

- 1 pkg Taco Seasoning, Mixed According to Directions

- 1 8 oz pkg Shredded Cheddar Cheese

- Additional Toppings as Desired: Shredded Lettuce + Sliced Tomatoes + Sour Cream + Guacamole


Step 1: Preheat oven to 350 F. Grease 9x13" pan.

Step 2: Brown hamburger meat and mix with taco seasoning.

Step 3: Layer pan starting with Doritos, hamburger and shredded cheese.

Step 4: Bake in oven for 15 minutes.

Step 5: Top with additional toppings as desired.
